Helpful brewing tips:

For a successful brew always use a ratio of 12 ounces minimum of starter tea per gallon or 3 ounces of starter per quart. Directions with the set give the ratios of tea and sugar needed to get started with this set.
For optimal conditions, keep out of direct sunlight, cover brewing vessel or storage container with a tight weave cloth to allow the culture to breathe but prevent contamination by insects or spores in the air
Do not use cheesecloth as your top cover- fruit flies will infiltrate your kombucha. Instead use 100% cotton cloth cover, coffee filter, or a tightly woven breathable cloth.
It is very important that Kombucha has access to air while it ferments.
