How did we get our start?

After frequent trips to our homeland in Costa Rica, we knew we wanted to bring the tremendous flavors found in Costa Rican coffee to the States. Starting out of our home garage, we began to roast and ship top coffees from around the world.

The warmth and bitterness of coffee paired with the sweet smoothness of chocolate…mmmmm. Coffee enhances the flavors of chocolate. Both coffee and chocolate have a variety of unique flavors and are independently complex. When paired together, delicious combinations are created.

Combination!

Coffee and Chocolate are like two peas in a pod. Literately! The reason cacao and coffee have such a kindred connection has to do with their production being so similar. Coffee and cacao come from a common latitude, both are seeds of a tropical fruit that are fermented and dried at their origin, and both are carefully roasted to bring out their flavor profiles.

Difference Between Espresso And Coffee Beans!

The espresso bean is simply a coffee bean that’s roasted more, ground finer, and brewed in an espresso machine or aeropress. Perhaps the biggest difference between brewed coffee and espresso is the flavor. Espresso derives its noticeably concentrated flavor and caffeine content from how soluble its grinds are. You’ll end up with a richer, full-bodied coffee with espresso that boasts less acidity. It bypasses “sour” and goes right to a balanced or bold end of the spectrum on the flavor wheel.

Dark Chocolate!

Dark chocolate is a form of chocolate containing cocoa solids and cocoa butter without the milk or butter found in milk chocolate. Dark chocolate without added sweetener is known as bitter chocolate or unsweetened chocolate.

Flavor

Something to keep in mind when putting together a pairing is flavor combination. Start with the basic flavors you might want to taste like sweet, sour, bitter, and salty. Sometimes these flavors are straightforward while other times the flavor may be more subtle.

Dark Chocolate

Chocolate is made from the tropical Theobroma cacao tree seeds. Chocolate has been around for over 3,000 years. As a consequence, the term dark chocolate was coined to distinguish traditional chocolate from its new rival (milk chocolate). In the late 20th century, dark chocolate regained popularity due to its superior supposed health benefits over milk chocolate.

Espresso

Some coffees will have deep layers of complexity, with strong flavors like dark chocolate or pepper. Bitterness can be balanced out by sweet or salty flavors while tartness can balance spice and sweetness.
